Sirloin Tip Steak
The Sirloin Tip Steak comes from the rump and hind quarter and runs parallel to the Sirloin Tip Center roast. The muscles here are used for movement, so the beef is leaner and less tender. Generally it is sold as roasts or steaks for marinating. Because it requires longer cooking times and/or marinating, this is a less expensive cut of beef, making it quite reasonable.
